Japanese Wagyu, particularly from breeds like the Japanese Black, is renowned for its exceptional intramuscular marbling. This delicate, fine-grained fat is integrated within the muscle fibers, resulting in a uniquely tender, buttery texture and a rich, complex umami flavor that is distinctly different from conventional beef. The meticulous breeding, rearing, and feeding practices in Japan contribute significantly to these characteristics.
The Japanese Meat Grading Association grades Japanese Wagyu based on two main factors: Yield Grade (the proportion of meat obtained from the carcass, graded A to C, with A being the highest) and Quality Grade (graded 1 to 5, with 5 being the highest). Four criteria determine the Quality Grade: Beef Marbling Standard (BMS), Beef Color Standard (BCS), Beef Fat Standard (BFS), and firmness and texture of the meat. A5 is the highest possible grade, indicating a high yield and the top quality in marbling, color, texture, and fat.
No. True Japanese Wagyu comes from specific Japanese cattle breeds raised and graded in Japan under strict regulations. “Wagyu” outside of Japan often refers to crossbreeds of Japanese Wagyu with local cattle. While these can be high-quality, they typically do not possess the same level of intricate marbling, tenderness, and unique flavor profile as authentic Japanese Wagyu.
The price of Japanese Wagyu reflects the significant investment in the cattle’s lineage, the specialized and lengthy raising process (often 2-3 years), the high cost of their specific feed, the meticulous care provided to ensure a stress-free environment, and the rigorous grading and export processes. The limited supply of top-grade authentic Japanese Wagyu also contributes to its premium price.

Yes. All items that we ship are frozen, but partial thawing may occur during transit.

It is not uncommon for gel packs to thaw slightly during transit, especially in warmer weather. As long as the Japanese Wagyu is still cold to the touch (below 40°F or 4°C) and the vacuum seal is intact, it is safe to refreeze or store in the refrigerator for immediate use. If your order arrives warm or the packaging is compromised, please contact us immediately.
We process orders quickly to ensure timely shipping. Please contact us as soon as possible if you need to modify or cancel an order. We will do our best to accommodate your request if the order has not yet been prepared for shipping.
Due to the perishable nature of our product, we generally do not accept returns unless there was an error with your order or the product arrived damaged or in poor condition. Please inspect your order upon arrival and contact us immediately with any issues.
Upon arrival, we recommend immediately transferring your Japanese Wagyu to the freezer if you do not plan to cook it within a few days. Kept frozen in its vacuum-sealed packaging, it can maintain its quality for several months. For refrigeration, store in the coldest part of your refrigerator and consume within 3-4 days.
The ideal method for thawing Japanese Wagyu is slowly in the refrigerator. Place the vacuum-sealed package on a plate or tray to catch any condensation and allow 12-48 hours per pound for it to thaw completely. For faster thawing, you can submerge the sealed package in cold water, changing the water every 30 minutes. Do not thaw at room temperature or in the microwave.
Japanese Wagyu is best cooked to rare or medium-rare to fully appreciate its tender texture and rich flavor. High-heat searing for a short time is often recommended. Ensure the steak is at room temperature before cooking and pat it dry. Use a hot pan or grill and cook for just a few minutes per side. Rest the meat briefly before slicing against the grain. Simple seasoning, like high-quality sea salt and black pepper, is often preferred to let the natural flavor shine.
